In 1922 a basket of apples—to which a tin cup was attached for payment—was placed in the flat-floored auditorium of the YMCA Building. Students paid, and business grew. The apple stand became a place to purchase soft drinks, packaged sandwiches, and candy. In 1930 the Sandwich Shop was opened in the same location. In 1937 the auditorium stage was removed to give the Tennessee Sandwich Shop more room. In 1939 the shop was redecorated and renamed the YMCA Grill. All expansions were paid for from proceeds from the shop, and in fall quarter 1939 the new “automatic checking register” installed in the grill recorded over one hundred thousand transactions.
