One of the five Knoxville Research Centers of Excellence designated in 2001 by President Wade Gilley, this previously existing center brings specialists in biochemistry, reproductive biology, food service management, parasitology, infectious diseases, and risk assessment together to increase efforts toward destroying or controlling food-borne pathogens. Principals in the center are faculty in the Departments of Animal Science and Food Technology and Science.
